springboot Expose Elastic's pipeline and indexDateSeparator properties

Those properties aren't exposed and can be used to tune how micirometer exports metrics to Elasticsearch.

It turns out that documentType is only relevant for versions of Elasticsearch < 7. Given that it has no use with recent versions, I think it would be better not to expose it.
